BEET CAKE

BEET CAKE RECIPE

2 - 14 oz cans of beets
3 eggs
1 cup sugar
3/4 cups vegtable oil
1 3/4 cups flour
1/2 cup cocoa
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt-------------------

Optional: Chocolate chips, nuts, raisins.-----------------------------------------------

Drain & puree beets. Beat eggs & sugar until yellow & frothy. Mix in puree & oil. Mix together dry ingredients in separate bowl and add gradually. Bake at 350F for 40 - 45 minutes in a bundt cake pan.
